Whoops! 

I accidentally made these brownies from Chocolate Covered Katie. I made a few tweaks like adding a banana for sweetness and texture and used bakers chocolate instead of cocoa powder. I think they are gooier than intended- which is AWESOME!

Raided parents’ freezer this weekend and found some meat that probably should have been eaten a year ago. 

So I grabbed it for our freezer. 

London Broil for free? You don’t say. Let’s add a side of asparagus and onions and call that dinner.

Dinner.
Stuffed pepper with the same filling as last week’s acorn squash and mashed potatoes. I added a tiny bit of butter (gasp!) and Greek yogurt. I could have eaten the whole pot of them, but I decided to refrain.
Plus, now E has lunch for tomorrow.

Stuffed Acorn Squash for dinner tonight. Warm and wonderful - perfect for winter. (Coincidental that this is when it’s in season? Totally not.)  
I forget how much I love squash. Squash squash squash. 
Stuffing (this made a A LOT of stuffing):
1 cup quinoa (we use tri-color)
1 yellow onion
Frozen corn
Black beans
Seasonings to taste
1. Cook the quinoa in 2? cups water with the onion until excess water is gone. Fluff with fork.
2. Add rinsed black beans and as much corn as you like. I think we only put in about 2/3 cup. 
3. Stir together! Add salt, garlic powder, pepper, whatever your favorite seasonings are.
4. Spoon into roasted acorn squash and put in the oven for a few more minutes. 
5. Add cheese if you wish. (Husband likes to add cheese to… hmm… everything.)

On occasion, I am unsure as to whether I am REALLY dumb or incredibly gifted.  Fairly frequently, individuals with my MBTI type are characterized as evil geniuses, so for now, let’s go with that…

Just had a mad desire for these. So mad that I went through Brenna’s archive just to look at a picture of them.

Ohhhh boy. I just tried this almond flour pancake recipe and they were AMAZING. They taste like french toast and all I had to put on top of them was a little butter.
Cons: High in fat and calories. Each one is only made out of a tablespoon of batter so they are small. From reading it, the author makes it sound like if you make them any bigger they will be hard to flip.
My recipe made 17 little pancakes with the macros of 83cals, 4c/6f/4p each.
Edit: I made them without any blueberries/fruit and used light agave instead of honey.

Ingredients:

  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 small sweet potatoes, peeled and chopped
  • 2 medium carrots, sliced
  • 1/2 red bell pepper, chopped (optional)
  • 2 tbsp olive oil
  • 1 15 ounce can black beans
  • 2 medium tomatoes, throw in food processor for a few seconds
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp cayenne (or to taste)
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation:

Sautee onions and garlic in olive oil for a minute or two. Then boil sweet potatoes until soft.
Chop carrots and bell pepper and toss into crock pot. Toss in onions, garlic, and sweet potatoes. Throw in all remaining ingredients and stir. 

Set to high for about 2 hours, or low for more hours?? 

Makes 6 servings of homemade black bean chili.

Ethan decided we should top ours with goat cheese, so we did. Bullya - dinner!

For dinner - Deep Dish Polenta Pizza!
And this week begins use as much stuff from our pantry as possible because rent was just paid, but pay day’s not until Friday!

We followed the recipe in the link for the crust, but really improvised with the toppings.
